In India, it is also known as kulath, Ulavalu, gahat, muthira. Kulthi dal(Horse Gram) is a rich source of carbohydrate, protein, dietary fiber, iron as well as vitamins like riboflavin(B2) and thiamine(B1). Kulthi dal is considered as a good food of the Pahari region of north India. In Himachal Pradesh Kulthi dal is used to make khichdi and kachori. It is mostly eat in winter. It takes time to become soft so soaked kulthi dal in hot water for 4-5 hours before dal is cook. Kulthi dal can be heat-producing for the body so always use galgal(Hill lemon), buttermilk or cumin seeds so that the heat of the body can be balanced.

Ingredients to prepare Kolthi Dal
For pressure cooking the dal
- 1 Katori/cup kulthi dal (Horse gram)
- 2.5 Katori /cup water for pressure cooking
- 1 tsp Haldi(Turmeric)
- 1/4 tsp Hing(Asafetida)
- 1tsp jeera(cumin)
- 1/2 tsp coriander seeds
- 1/2 tsp methi(Fenugreek)
- 2-3 Dry red chilies
- 1/4 tsp of black pepper
- 1/4 cup Hill Lemon juice(Galgal)/dry mango powder(Amchoor)
- 4-5 cloves garlic
Steps to make Kulthi ki Dal
Wash the kulthi seeds and soak Kulthi dal for about 4-5 hours.
Put dal in a pressure cooker and add 2.5 cups of water and a tbsp of salt then boil in Low medium flame.
Cook it for 10-12 minutes and turn off the flame.
Let the pressure of the cooker release naturally. Now open the lid of the cooker.
Mash the dal with a metal spoon. You also use a hand blender to mash the dal.
Take a pan and put 2tbsp of oil into it.
Once the oil is hot add a pinch of Hing(Asafetida) Now add 1tsp of cumin(jeera), 1/2 methi(fenugreek)seeds,1/2 coriander seeds, and 2 dried red chilies. Let the seeds sizzle.
Now add 4-5 cloves of chopped garlic and cook for a minute.
Add onion until golden brown after that add a pinch of black pepper.
Now add 1tsp of turmeric(Haldi) and salt as per your taste mix it well.
Add 1/4 cup Juice of hill lemon(galgal) and cook it for 2-3 minutes on medium flame.
Add mashed dal to the fried mixture.
Stir the kulthi dal well with the mixture of masala. Pour some water if you needed.
Stir well the dal and cook for 5-6 minutes on low medium flame.
Switch off the flame. Now for Garnishing sprinkle finely chopped coriander leaves. Stir one last time.
Serve kulthi dal with jeera rice or roti.

Add chopped garlic and onion until golden brown after that add a pinch of black pepper. Add turmeric(Haldi) and salt mix it well. Add Juice of hill lemon(galangal) and cook. Add mashed dal to the fried mixture. Stir well the dal and cook for 5-6 minutes on low medium flame. Garnish it with finely chopped coriander and serve hot with roti or jeera rice.
