Ingredients to prepare Kolthi Dal

\r\nFor pressure cooking the dal\r\n

  1. 1 Katori/cup kulthi dal (Horse gram)

  3. 2.5 Katori /cup water for pressure cooking
  4. \r\n

\r\nOther ingredients\r\n

    \r\n

  1. 1 tsp Haldi(Turmeric)
  2. \r\n

  3. 1/4 tsp Hing(Asafetida)
  4. \r\n

  5. 1tsp jeera(cumin)
  6. \r\n

  7. 1/2 tsp coriander seeds
  8. \r\n

  9. 1/2 tsp methi(Fenugreek)
  10. \r\n

  11. 2-3 Dry red chilies
  12. \r\n

  13. 1/4 tsp of black pepper
  14. \r\n

  15. Salt
  16. \r\n

  17. 1/4 cup Hill Lemon juice(Galgal)/dry mango powder(Amchoor)
  18. \r\n

  19. 4-5 cloves garlic
  20. \r\n

Steps to make Kulthi ki Dal

\r\nWash the kulthi seeds and soak Kulthi dal for about 4-5 hours.\r\n\r\nPut dal in a pressure cooker and add 2.5 cups of water and a tbsp of salt then boil in Low medium flame.\r\n\r\nCook it for 10-12 minutes and turn off the flame.\r\n\r\nLet the pressure of the cooker release naturally. Now open the lid of the cooker.\r\n\r\nMash the dal with a metal spoon. You also use a hand blender to mash the dal.\r\n\r\nTake a pan and put 2tbsp of oil into it.\r\n\r\nOnce the oil is hot add a pinch of Hing(Asafetida) Now add 1tsp of cumin(jeera), 1/2 methi(fenugreek)seeds,1/2 coriander seeds, and 2 dried red chilies. Let the seeds sizzle.\r\n\r\nNow add 4-5 cloves of chopped garlic and cook for a minute.\r\n\r\nAdd onion until golden brown after that add a pinch of black pepper.\r\n\r\nNow add 1tsp of turmeric(Haldi) and salt as per your taste mix it well.\r\n\r\nAdd 1/4 cup Juice of hill lemon(galgal) and cook it for 2-3 minutes on medium flame.\r\n\r\nAdd mashed dal to the fried mixture.\r\n\r\nStir the kulthi dal well with the mixture of masala. Pour some water if you needed.\r\n\r\nStir well the dal and cook for 5-6 minutes on low medium flame.\r\n\r\nSwitch off the flame. Now for Garnishing sprinkle finely chopped coriander leaves.
